 Ingredients
2 pounds peeled and thickly sliced yams
1 cup canned pineapple tidbits juice reserved
1 cored and chopped apple
1/2 cup Sun-Maid Natural Raisins
1 tablespoon butter
1 cup thinly sliced onion
3/4 cup pineapple juice
2 tablespoon packed brown sugar
1/2 teaspoon salt
Directions: COMBINE yams, pineapple and apple in a greased
13"x19" baking dish. SPRINKLE raisins evenly over top. MELT butter in a skillet. ADD onion and cook over medium-high heat 5 to 7 minutes
stirring frequently until onion is softened and golden. POUR reserved pineapple juice into a measuring cup adding
additional pineapple juice if needed to equal 3/4 cup. STIR into onion mixture along with brown sugar and salt. Cook
just until sugar is melted. POUR over raisins and yams. COVER with aluminum foil. Bake at 350 F about one hour or until yams are tender.
