Makes 12 muffins
Raisin-Walnut Bars

1 cup all-purpose flour
1-1/4 cup packed brown sugar, divided
1/2 cup (1 stick) butter, softened, cut into pieces
1/2 teaspoon salt, divided
2 eggs

2 tablespoons all-purpose flour
1 teaspoon vanilla
1/2 teaspoon baking powder
1/4 teaspoon ground ginger
3/4 cup Sun-Maid Natural Raisins
1 cup coarsely chopped walnuts


Preheat oven to 325 degrees F. BLEND flour, butter, 1/4 cup brown sugar and 1/4 teaspoon salt with a pastry blender or two knives until mixture is evenly combined. PAT into bottom of a 13 x 9-inch pan. BAKE for 15 minutes until golden brown. MIX remaining 1 cup brown sugar, eggs, flour, vanilla, baking powder, ginger and 1/4 teaspoon salt in a medium bowl. Stir in raisin and walnuts. POUR raisin mixture over hot crust. BAKE additional 20-25 minutes until top is browned and set. Cool completely. For easier cutting, refrigerate in pan until chilled.
